This is nothing short of delicious with warmed cheese and avocado.
4 Burrito size flour tortillas
1 pkg (8 oz) Mexican Blend Shredded Cheese
1-1/3 c Flaked crab (real or imitation)
1/2 c Minced red onion
1 Large ripe avocado, peeled, pitted and thinly sliced
Chopped cilantro, salsa, sour cream
Place tortillas on a flat surface. Sprinkle 1/4 c cheese on half of each tortilla. Top each with 1/3 c crab, 2 tbsp onion and 1/4 of the avocado slices. Sprinkle with 1/4 c cheese and fold in half.
Place each tortilla in a large skillet and cook for about 2-3 minutes on each side over medium heat, until golden brown and crisp.
Top with cilantro, salsa and sour cream, if desired.

I think it's easier & neater to lay the tortilla in the pan flat, place the toppings then put another tortilla on top. After the cheese has melted some, turn the whole thing over and toast for a few more minutes. Cut into wedges with a pizza cutter and enjoy!

The directions say to fold over once. Wouldn''t the cheese run out when heated in pan for 2 to 3 min. on each side? ( It all sounds very good!)
