Black Bean & Rice Tostada

This recipe caters to both vegetarians as well as meat eaters.

Ingredients

1 c White rice, uncooked

1 can (15 oz) black beans, drained, rinsed

1 can (11 oz) corn, drained

1 pkg (16.35 oz) Taco Bell Home Originals Soft Taco Dinner

2-1/2 c Shredded lettuce

1-1/4 c Shredded cheddar cheese

Preparation

For crisp tortilla:

Preheat oven to 350 degrees. Spray both sides of flour or corn tortillas (6 in) with cooking spray, then place in a single layer on baking sheet. Bake 10 minutes or until crisp and lightly browned.

Prepare rice in large saucepan as directed on package. Add beans, corn and Taco Seasoning; mix well. Cook 5 minutes or until heated through, stirring occasionally.

Top 10 crisped tortillas evenly with rice mixture, lettuce, Taco Sauce and cheese.

Makes 5 servings, 2 tostadas each.

Cook's Notes

To make this unvegetarian, add cooked ground beef or chicken to rice mixture. This is a great meal that pleases everyone's tastebuds.
