Pumpkin Bars

A lowfat, yummy recipe.

Ingredients

2 cups Pumpkin
1/2 cup Egg whites (or egg substitute)
3/4 cup Unsweeented applesauce
1/2 cup Evaporated fat free milk
1 tablespoon Pumpkin pie spice
18.25 ounces Spice cake mix
1 tablespoon Butter

Preparation

Mix all ingredients together except 1/4 of the cake mix and the butter. Mix well for 2 minutes, then pour into a sprayed 9x13 pan; melt the butter and add the remaining dry cake mix, crumble over top of the batter.

Bake at 350 degrees for 60 minutes.

This reciepe was a delicious alternative to the popular pumpkin bars made without the low fat alternative. My children liked them, that thrilled me. I also modified it a bit and used regular cake mix with pumpkin spices added. It was fine.
