| 2 cups | Pumpkin |
| 1/2 cup | Egg whites (or egg substitute) |
| 3/4 cup | Unsweeented applesauce |
| 1/2 cup | Evaporated fat free milk |
| 1 tablespoon | Pumpkin pie spice |
| 18.25 ounces | Spice cake mix |
| 1 tablespoon | Butter |
Mix all ingredients together except 1/4 of the cake mix and the butter. Mix well for 2 minutes, then pour into a sprayed 9x13 pan; melt the butter and add the remaining dry cake mix, crumble over top of the batter.
Bake at 350 degrees for 60 minutes.
