Ingredients

2 pound Ground round or ground sirloin
1/2 cup Long grain rice [long cooking]
2 Slightly beaten eggs
2 tbsp Snipped parsley
4 tbsp Finely chopped onion
1 tsp Salt
Dash of pepper or may use a pepper blend
1 - 10 3/4-oz Can condensed tomato soup [divided]

1 tsp Worcestershire sauce

Head of Cabbage
2 can Tomatoes [any style]

Preparation

MEAT MIXTURE: Combine egg, rice, parsley, onion, salt, pepper, and 1/4 cup of condensed tomato soup, then combine with meat. Mix thouroughly. Makes 3-5 servings for each recipe below.

PORCUPINES: Shape into about 20 small balls and place in skillet. Brown meat balls lightly. Cool & place in meal-size individual containers. Mix remaining tomato soup with 1/2 cup of water and 1 tsp of Worchestershire sauce. Divide sauce evenly between containers.

****Serving Day: Thaw over night in freezer. Place in sauce pan, bring to near boil, then simmer for 30 minutes until well heated. Optional to add a can of tomatoes. May serve with Parmasan Cheese.

CABBAGE ROLLS: Bring medium pot of water to boil. Remove outer cabbage leaves if need be. Remove core of cabbage or cut slits around the core. Place cabbage head in boiling water. As leaves soften and loosen up, carefully remove and drain individual leaves. Individual leaves should be soft enough to roll around the meat mixture.

Shape into about 10 oblong mini- meatloaves. Place each mini-meat loaf on one or two of the cabbage leaves and roll around, tuck in edges.

Place in Meal-sized freezer containers. Divide a can of tomatoes between containers.

********SERVING DAY: Thaw in freezer over night. Place the cabbage rolls in a baking dish. Rolls should be covered with canned tomatoes. Cover and Bake in 375 degree oven for 40 minutes to 1 hour.
