| 4 | Flour tortillas |
| 1/4 cup | Salsa |
| 2 | Eggs (or half a carton of egg substitute) |
| 1/4 lb. | Firm tofu |
| 1/4 cup | Feta cheese |
| 1/4 cup | Part skim mozzarella cheese |
| 1/2 tsp. | Dried basil |
| 1/4 tsp. | Salt |
| | Dash pepper |
| 1/4 tsp. | Oregano |
1. Beat eggs and combine with tofu using the back of a fork until tofu is in small pieces. Saute egg and tofu combination in a non-stick pan sprayed with non-stick cooking spray.
2. Add oregano, basil, salt and pepper.
3. Slice tortillas in half. Heat tortilla over open flame if you have a gas range, or in the saute pan as you finish cooking the egg/tofu mixture.
4. Place egg/tofu mixture inside the tortillas, add the crumbled feta and roll up. Top with grated mozzarella cheese.
5. Put in microwave for 30 seconds or until cheese on top appears melted. Add salsa to top and serve.
Great way to get soy in your diet. If you break up the tofu enough your family may not even notice it.
