Mexican Omelet

Ingredients

3 eggs and 1 tablespoon Soy milk

Or 1 carton of egg substitute

1 tsp. Mexican seasoning blend

1 tblsp. Guacamole

1 tblsp. Shredded mexican cheese blend

Preparation

Spray omelet pan with non-stick cooking spray and heat until hot but not smoking. Meanwhile beat eggs with soy milk (or egg substitute) and mexican seasoning. Pour into heated pan and cook omelet until set on bottom and around edges. Add guacamole and cheese in a line down the middle of the cooked egg mixture and fold egg over and finish cooking.
