Mashed Potatoes Cauliflower

Ingredients

2 Heads cauliflower ( 8 cups)
1 tablespoon Butter
1 tablespoon Half and half
Salt

Preparation

1. Break cauliflower into equalsize florets. Place in a large saucepan in about 2 inches of water. Simmer over medium heat 20 to 25 minutes or until very tender and falling apart. Drain well.

2. Place cooked caulifolower in food processor or blender. Process until almost smooth. Add butter. Process until smooth adding half and half as needed to reach desired consistency. Salt to taste

My husband loves this in place of mashed potatoes. He has a bad case of acid reflux so lots of foods bother him. We stay away from milk so I substitute fresh lemon juice.
