Baked Eggs w/ Day Old Bread

Can make a quick meal if you cook it now, for freeze for later if you are a once a month cooking fan.

Ingredients

6 slices Bread cubes, day old bread
2 cups Cheddar cheese, shredded
1 cup Ham cubes
1/4 cup Green bell pepper
1/2 cup Finely chopped onion
6 Eggs
3 cups Milk
1/2 teaspoon Salt -- optional
1/2 teaspoon Dry mustard -- optional

Preparation

Mix bread, cheese, ham, bell pepper and onion; spread in a 13 x 9x 2 baking dish treated with nonstick spray. Whisk eggs and milk, and pour over top. Cover dish with foil and freeze.

To prepare for serving, thaw dish, and bake uncovered in a preheated 375 degree oven for 45 minutes to 1 hour. Knife should come out clean when inserted. Makes 8 - 10 servings.

Cook's Notes

Thaw in refrigerator over night.
