Ingredients
Green, Red, or Yellow Peppers, halved or quarted
Onions, Vidalia & red are especially good, whole or sliced
Zucchini, slice length-wise
Summer Squash, sliced
Sweet Potatoes, sliced about 1/4 inch thick
Portobellos
Eggplant, slice about 1/4 inch thick
Baby Carrots, steam about 6-8 minutes first
PAM butter spray
Mrs. Dash or favorite seasoning.
Preparation
Pre-heat grill.
Spray with PAM or brush with oil before placing on grill.
Cook until vegetables are just tender, 3 to 10 minutes on each side, depending on the vegetable. A whole onion takes 20 to 30 minutes.
Can place on upper shelf of grill while entree cooks or place on platter as an appetizer.

Can cook on skewers also.
