Favorite for Sunday Dinner. Recipe is easily doubled. Serve with green beans and almonds, baked potatoes, Pantry Fruit Salad.
1 # lean boneless sirloin steak [or round] trimmed of all fat
1 cup Tomato juice or stewed tomatoes
1 Large onion, sliced thin and separated into rings
1 Large green bell pepper, sliced into thin rounds
Salt and pepper to taste
Spray a nonstick skillet with vegetable oil cooking spray. Brown the steak [medium-high heat to brown] well on both sides. Pour off or blot away any fat. Return the meat to the skillet and add the remaining ingredients. Cover and simmer about 1 1/4 hours, or to desired doneness.
Note: the meat may be transferred to a covered baking dish and cooked in a 350 degree oven until tender if so desired. [Carmelize/fry the onions and brown the peppers first.] [After browning, before cooking to tender. May cool part of the meat and freeze to be used at a later meal. Thaw and cook in oven as above–may take a little longer because of freezing.]
