Ingredients

1/2 cup All-purpose flour
1/2 tsp. Salt
1/4 tsp. Black pepper
1/4 tsp. Garlic powder
4 Boneless, skinless chicken breast halves (about 1 1/3 lbs total) defrosted if frozen
1 tbsp. Vegetable oil
1 Lemon
1 tbsp. Butter
1/2 tsp. Honey

Preparation

Combine the flour, salt, pepper and garlic powder in a shallow dish and set aside. Place the chicken breasts, one at a time, between 2 sheets of wax paper or plastic wrap. Pound the breasts with several whacks of a meat mallet or rolling pin so they are an even 1/2-inch thick. Peel off the paper and cut the breasts in half lengthwise. Heat the oil in an extra-deep 12-inch nonstick skillet over high heat. Meanwhile, dip the chicken pieces into the flour mixture to coat on both sides, shaking off any excess. Add the pieces to the skillet and cook until lightly browned, about 2 minutes. While the chicken cooks, cut the lemon in half. Cut one half into th in slices and set aside. Squeeze the juice from the other half into a small bowl (picking out any seeds that fall in) and set aside. Turn the chicken and saute until lightly browned and cooked through, another 2 minutes. Remove the chicken to a platter. Add the butter to the skillet and reduce the heat to low. When the butter is melted, remove from the heat and stir in the lemon juice and honey. Immediately drizzle the lemon mixture over the chicken. Garnish with the reserved lemon slices and serve.

Pleasantly surprised! Quick and easy to make - kids LOVED it - my 7 year old asked for seconds! I struggle finding good healthy meals my kids will enjoy - this is one of them!

My husband said this was the best recipe I had tried so far from this website. The kids even ate it!

To make gluten free you could add Bob's Red Mill all purpose baking flour. Just add 1/4 teaspoon of Xanthan Gum for every cup of flour. You could also use Chex rice cereal, it's gluten free and you just smash them in a zip lock bag.

This sounds great, but how can I make it gluten free? What can I use to substitute for the flour to coat the chicken?

I made this for my husband and I and we really enjoyed it! I think I might put the lemon sauce on the side next time as I thought it was a little too much lemon taste, but my husband who loves lemon enjoyed the taste! Super easy to make too!

I did use the lemon sauce and I garnished it with the extra lemon slices. My family loved it. My step daughter was with us that night and asked for the recipe. Yumm!!!

Nice recipe. This type of sauce is too lemony for me. Instead of using lemon juice, I prefer to simply place lemon slices on top of the chicken toward the end of cooking - this leaves a more subtle lemon flavor. I also like to heat capers in the pan and use them to top the chicken.
