2 tbsp. Butter or margarine
2 tbsp. Corn starch
1/2 tsp. Salt
1/8 tsp. Ground pepper
1 cup Whole or low-fat milk
1 cup Shredded cheddar cheese
1/4 cup Regular or low-fat sour cream
In a medium saucepan over medium heat, melt butter. Stir in corn starch, salt and pepper. Slowly add milk, stirring constantly. Bring to a boil, stirring briskly. Boil 1 minute. Stir in cheese and sour cream. Makes 1 3/4 cup.
Use with pasta, broccoli, asparagus or cauliflower. Another variation is to substitute Swiss cheese for the cheddar.
