Beef and Rice Skillet

Delicious even when substituting bacon with ground pork. You will want to double up on this, makes good left-overs too. Easy to heat up while at work.

Ingredients

4 slices Bacon, cut into 1-inch pieces

1 lb. Lean ground beef

1/2 cup Chopped onion

1/2 cup Chopped green bell pepper

2 Garlic cloves, minced

1/2 teaspoon Salt (optional)

2 cups Water

1 (14.5 oz) can Diced tomatoes (Italian style) undrained

1 (2.25 oz) can Sliced ripe olives, drained

1 1/2 Teas. dried Italian seasoning

2 cups Uncooked instant white rice

4 oz. (1 cup) shredded mozzarella cheese

Preparation

Cook bacon in large skillet over medium-high heat until brown. Add ground beef, onion, bell pepper, garlic and salt; cook until beef is thoroughly cooked, stirring frequently. Drain.

Add water, tomatoes, olives and Italian seasoning; mix well. Bring to a boil. Stir in rice, Reduce heat; cover and simmer 5 minutes or until rice is tender.

Sprinkle with cheese; cover and let stand until melted.

Cook's Notes

-Add ground pork in place of bacon. -I add Italian style tomatoes for the extra zest. You can add regular diced tomatoes instead. -delicious with garlic bread, leaf salad, and a fruit
