Pronto Turkey Quesadillas

Ingredients

1 pkg Honeysuckle White turkey chops cut into strips

1 cup Red onion, chopped

1/2 tsp Cumin

1/2 tsp Salt

1/4 tsp Crushed red pepper

1 tbsp Olive oil

4 Large flour tortillas

3/4 cup Cheddar and/or Monterey Jack cheese, shredded

Preparation

1. Saute turkey strips, onion, cumin, salt, and red pepper in olive oil.

2. Cook until turkey is no longer pink; remove from heat.

3. Spread turkey mixture and cheese on two tortillas; top with remaining tortillas.

4. In a lightly greased skillet, heat filled tortillas over medium-high heat until golden brown and crispy, turning once.

Cook's Notes

Let cool slightly before cutting. Serve with salsa or guacamole if desired.
