Ingredients
3 tbsp All-purpose flour
3 tsp Curry powder
1/4 tsp Salt
1/8 tsp Ground cloves
1 1/2 lbs Lean pork stew meat
2 tbsp Butter or margarine
1 Medium onion, chopped
3 tsp Beef bouillon granules
3 cloves Garlic, minced
2 Large Granny Smith apples
1 8 oz. Can tomato sauce
1/2 cup Water
1/4 cup Raisins
1 tbsp Lemon juice
Preparation
1. In medium bowl, mix flour, curry powder, salt and cloves. Toss meat in mixture until well coated.
2. In a large skillet over medium heat, brown meat in butter. Place meat in slow cooker.
3. Layer over meat, in order, onion, bouillon granules, garlic and apples. Pour tomato sauce and water over apples. DO NOT STIR.
4. Cover and cook on high for 3 1/2 to 4 hours or on low for 7 to 8 hours or until meat is very tender.
5. Stir in raisins, lemon juice and additional curry powder to taste. Cover and cook on high for 5 minutes or until raisins are softened.
Cook's Notes
When you stir in the ingredients in step 5, the apples will disintegrate, forming a rich, sweet sauce. This dish is best served over couscous, with a garnish of sliced green onions. Also, a good vegetable side dish for this recipe is boiling some sliced carrots and adding butter, ginger powder and brown sugar.
