Ingredients

6 Large Eggs
1/8 cup Whole milk or cream
1/2 cup Chopped peppers
1/4 cup Chopped fresh onion
1 cup Diced tomato
1/4 Cupi sliced fresh mushrooms
8 slices Bacon
(or 1/2 cup Diced turkey or ham)
4 oz. Shreded sharp cheese
Salt
Pepper
Tabasco sauce
Catsup

Preparation

Cook bacon slices until dry and crisp in microwave. Crumble into small dry pieces and squeeze grease out with paper towels.

Beat egg in bowl with wire wisk or spatula adding milk until egg turns lighter lemony color but not allowing it to froth or bubble.

Pour one fourth into Pam sprayed heated Omelet skillet cooking one side until dry and lossened from skillet surface. Flip omelet over to cook other side. Add 1/4 of each veggie and meat ingredient chosen by the person you are preparing for. Pour 1/4 of cheese on top, flip half of egg over the other half and cook covered for a few minutes to allow the food to heat through and the cheese to melt.

Slide onto plate and do 3 more. Salt, Pepper, tabasco or catsup added to your liking.

Cook's Notes

We like the bacon crispy and no soft chewy parts and no grease. You can change the ingrdients to your taste - very versatile. *Recipe analysis using turkey and reduced fat sharp cheddar cheese*
