For the pasta:
1. Cook pasta in boiling water for 10 minutes or until done; be careful not to overcook pasta.
2. Rinse with cold water and drain.
For the veggies:
1. Heat the oil in a large skillet and saute the garlic for 1 minute.
2. Add the mushrooms, carrots and 1/2 tsp soy sauce; saute for 2 minutes.
3. Add the cooked pasta, kale, and water; cover and cook over medium heat for 3 to 5 minutes until the kale is tender and bright green and the pasta is hot.
4. Toss to mix.
