Ingredients
1 1/2 cups Lowfat chocolate milk
1/3 cup Sugar
1/4 cup Unsweetened cocoa powder
2 tbsp Cornstarch
1/4 cup Reduced fat creamy peanut butter
4 (6 ounce) plastic or paper cups
4 Popsicle sticks
Preparation
Combine sugar, cocoa and cornstarch in a medium saucepan and gradually whisk in milk. Place over medium heat; bring to a simmer whisking frequently. Reduce heat; simmer until thickened, about 2 minutes, whisking frequently.
Remove from heat and stir in peanut butter until it melts. Spoon mixture into plastic cups; place cups in an 8-inch baking pan or pie pan. Place popsicle sticks in centers. Freeze until firm.
Cook's Notes
Variation:
For pudding, increase quantity of milk in recipe to 2 cups and proceed as directed. Serve pudding warm, at room temperature or chilled topped with additional milk.
Time-saving tip:
Whip up this icy treat in a flash by replacing the ingredients above with instant chocolate pudding mix and chocolate milk, mix according to the instant pudding package directions. Melt the peanut butter in the microwave, stir it into the pudding and follow directions for making pops as directed above.
