Chile Cheese Strata

A Spanish inspired hearty dish. Serve with a side of beans and a vegetable for a complete meal.

Ingredients

1 1/2 cup 1% lowfat lactose-free milk*

6 Eggs, beaten

4 oz Can chopped green chiles

1/4 cup Chopped onion

1/4 cup Salsa

1/4 cup Chopped red pepper

4 cup Tortilla chips, coarsely broken

1 cup Chihuahua cheese, shredded (reserve 1/2 cup)

1 cup Cheddar cheese, shredded (reserve 1/2 cup)

Preparation

In mixing bowl, combine milk, eggs, chiles, salsa, onion and red pepper; mix until well blended. In lightly greased 2-quart baking dish, sprinkle half of tortilla chips. Top with 1 cup each Chihuahua and cheddar cheese. Pour half of milk mixture over cheeses; repeat with remaining tortillas, cheese and milk mixture. Cover and chill 2 to 3 hours or overnight. Bake at 350 degrees for 45 to 50 minutes, or until knife inserted in center comes out clean. Let stand 5 to 10 minutes before serving. Garnish with jalapeno pepper slices, tomato and cilantro if desired.
