Baked Acorn Squash Stuffed with Quinoa and Cherries

Ingredients

1/2 cup Eden organic quinoa, cooked as per pkg directions

2 Medium acorn squash, halved & seeded

1/2 cup Walnuts, chopped

1/2 cup Eden dried Montmorency cherries, chopped

2 tbsp Pure maple syrup

1/4 tsp Cinnamon

Eden organic safflower oil

Preparation

1. Preheat oven to 350F.

2. Lightly oil the squash skin.

3. Mix the quinoa, walnuts, cherries, syrup and cinnamon; stuff each squash half with the mixture.

4. Cover the squash with foil and place in a baking dish.

5. Bake for 45 minutes, or until squash is tender.
