Spicy Udon Salad

Ingredients

1 cup Eden Arame OR Hiziki

1 cup Water

2 Medium carrots, cut into matchsticks

1 pkg (8 oz.) Eden organic udon OR soba

3 - 4 Green onions, thinly sliced

Dressing:

1 tbsp Eden hot pepper sesame oil

1 tbsp Eden toasted sesame oil

1/4 cup Eden ume vinegar

1/4 cup Tahini

2 - 3 cloves Garlic, minced

1/8 cup Water OR stock

Preparation

1. Soak arame or hiziki in water for 10 minutes.

2. Simmer for 10 to 15 minutes; drain.

3. LIghtly steam carrots; rinse with cold water.

4. Cook pasta as package directs.

5. Mix pasta, arame, carrots, and green onions.

6. Prepare dressing; add to salad.

7. Mix well; chill before serving.
