Pesto-Feta Pizza with Shrimp

A gourmet pizza without tomato sauce

Ingredients

1 pkg Refrigerated pizza dough

1/2 pound Raw shrimp, peeled and deveined (it will come to about 6 oz. without shells)

4 ounces Feta cheese, crumbled

1/3 cup Basil pesto

1/4 cup Thin-sliced red onion

1/4 cup Sliced fresh mushrooms

1 Small jar of marinated artichoke hearts, drained and chopped

3 tablespoons Grated Parmesan cheese

Extra virgin Olive oil

Preparation

Preheat oven to 425°,

Press the pizza dough out on an oiled baking sheet and brush the surface with more olive oil. Spread pesto on the oiled dough and sprinkle the feta, onions, artichoke hearts, mushrooms and Parmesan cheese over it evenly. Top with raw shrimp and bake for 12-17 minutes (depending on the thickness of the dough), until the shrimp are cooked through but still moist and tender.

Cook's Notes

Cut into small pieces this makes a great hors d'oeuvre. Re-heating it will toughen and dry out the shrimp, but it will still taste good.
