Grilled Salmon with White Wine Marinade

For those who are tired of teriaki glazes and orange juice marinades

Ingredients

2 6-oz Salmon fillets or steaks

Marinade:

1/2 cup Olive oil

2 tablespoons Dry white wine

3 tablespoons Fresh lime juice

1 teaspoon Honey

1/2 teaspoon Fresh rosemary leaves, crushed

1/4 teaspoon Paprika

Preparation

Whisk ingredients together and pour over 2 salmon steaks or fillets in a shallow glass dish, allow to marinate at least 30 minutes. Grill the fish in a basket on an outdoor grill or on a ridged indoor grill until it is just opaque.

Serve with a broccoli and carrot slaw and a good crusty bread (also grilled, à la bruschetta)

Cook's Notes

Variations:

1) Try a sweeter wine and leave out the honey

2) Use red wine

3) Use fresh thyme instead of rosemary
