Lasagna Roll-ups!

saw this on the Weight Watchers website, and these make a great light meal or appetizer. For dinner occasions, add a nice salad and some fresh bread! mmm!

Ingredients

8 Lasagna noodles

1 jar Newmans own Marinara

1/2 cup Water

1/2 Green pepper

1 cup 1% low-fat cottage cheese

1/2 cup Kraft Low-Moisture, Part-Skim Finely Shredded Mozzarella Cheese

1/4 cup Kraft Free Shredded Cheddar Cheese

Preparation

Bring marinara sauce, water, and chopped green pepper to a boil in saucepan. Let it simmer until peppers are soft, about 30 minutes. ( I also add a little Italian seasoning and some minced garlic but that's up to you, or you can omit the water and peppers and just pour the jar of sauce over the rollups once they are in the pan) Cook lasagna noodles 10 minutes or according to package directions, omitting salt and oil. Drain, lay out on a clean cloth towel. Combine cottage cheese, 1/2 of the Mozzarella, and all of the cheddar. Place equal amounts on each lasagna noodle, spreading out as evenly as possible. Roll them up. Place roll-ups in baking dish, seam side down. Pour sauce over the top and sprinkle with remaining Mozzarella cheese. Bake covered for 30 minutes. (350)

Cook's Notes

These may also be frozen before baking, omitting sauce until ready to bake. if you are on the Weight Watchers program these have about 3 points each. also are low in fat.
