Almond Chicken Dijon

quick, easy and low carb

Ingredients

4 Small boneless skinless chicken breast halves (1 lb)
2 tbsp. Light mayo
2 tbsp. Dijon mustard
1/4 cup Slivered almonds, coarsely chopped

Preparation

PLACE chicken in lightly greased 13x9 in baking pan

MIX mayo and mustard until will blended. Spread top side of each chicken breast half with 1 Tbsp. of the mix; sprinkle evenly with the almonds.

BAKE at 375 degrees for 20-25 min or until chicken is cooked thru.

I recommend going a little lighter on the Dijon Mustard. It was too strong for the chicken and overwhelmed the meal. However the chicken turned out great and I'll use this recipe again!
