salmon and sweet-potato frittata

Ingredients

2 t Olive oil

2 (3 cups ) large sweet potatoes, peeled and grated

1 (1 cup) small onion, chopped

1 pound Skinless salmon fillet, 2 skinless, boneless chicken-breast halves, or 1 pork tenderloin (1 pound) — meat or fish cut into 1/2-inch cubes

6 Eggs

1/4 cup Milk

2 cups (8 oz) Swiss cheese, diced

1/4 cup Fresh tarragon leaves

1 t Kosher salt

Freshly ground pepper

Preparation

Heat oven to 375° F. In a deep 8- to 10-inch ovenproof skillet, heat the oil over moderately high heat. Add the sweet potatoes and onion and cook, stirring, until tender, about 5 minutes. Add the fish or meat; cook, stirring, for 5 minutes for the salmon, 10 minutes for the chicken, or 15 minutes for the pork, or until cooked through. Remove the skillet from heat.

Whisk together the eggs, milk, cheese, tarragon, salt, and a few grinds of pepper and add to the skillet. Stir. Bake in the upper third of the oven for 20 minutes or until set. Transfer the frittata to a plate; cut into wedges.

This was delicious! I served it to my in-laws when they came to visit and it was a hit. Add a salad, and crusty bread on the side with a nice glass of wine and it's a wonderful meal.
