Ingredients
1 tbsp Eden extra virgin olive oil
3 cloves Garlic, minced
1 cup Onion, diced
1 Small carrot, diced
2 cans (15 oz. each) Eden organic lentils with onion & bay leaf, drained
1 tsp Eden shoyu soy sauce
1 tsp Eden red wine vinegar
1/4 tsp Cumin
1/2 tsp Dried basil
2 tbsp Fresh parsley, minced
1 can (14.5 oz.) Eden organic diced tomatoes, drained OR
1 can Diced tomatoes with green chilies, drained
Preparation
1. Heat oil in a skillet and saute half of the garlic, all of the onion, and carrot for 2 to 3 minutes.
2. Pulse 1 minute in a food processor.
3. Add beans remaining garlic, shoyu, vinegar, cumin, basil, and parsley; blend until smooth.
4. Place in a bowl; arrange the diced tomatoes around the bowl.
Cook's Notes
Garnish the pate with a small sprig of parsley or celery leaves. Dip any Eden chips or crackers into the pate, garnish with tomatoes.
