Five Bean Soup

Ingredients

2 tbsp Eden extra virgin oilive oil

3 cloves Garlic, minced

1 Medium onion, diced

1/4 cup Celery, diced

1/2 cup Carrots, diced

1 Medium organic potato, diced

2 tbsp Organic barley, rinsed

3 cups Water

1 cup Eden organic pinto beans*

1 cup Eden organic black beans*

1 cup Eden organic kidney beans*

1 cup Eden organic aduki beans*

1 cup Eden organic navy beans*

1 cup Organic sweet corn, fresh or frozen

1 1/2 cups Eden organic spaghetti sauce

1 1/2 tbsp Eden shoyu soy sauce

1/2 tsp Dried oregano

1/2 tsp Dried basil

1 1/2 tsp Crushed bay leaf

* 8 oz. From canned beans, do not drain!

Preparation

1. Heat oil and saute garlic and onion until onion is translucent.

2. Add celery, carrots, potato, barley, and water; simmer 30 minutes.

3. Add beans, corn, spaghetti sauce, shoyu, and herbs.

4. Simmer 5 to 10 minutes and serve.

Cook's Notes

Typo in reporting the amount of sodium; should be 'mg', not 'g' (big difference ~ LOL!)
