Fried Curried Rice Crackers (Murukku)

This is a very popular snack from Madras, delicious in the morning with a cup of coffee.

Ingredients

2 tsp Cumin seeds
1 cup Chickpea flour
Salt to taste
1 tsp Cayenne pepper
1 tsp Baking powder
Pinch asafetida
1/4 to 1/2 cup Water
4 tbsp Oil
3 cups Rice flour
2 cups Oil for frying

Preparation

1. Roast cumin seeds, crush and add to the chickpea flour; add salt, cayenne and baking powder.

2. Dissolve asafetida in about 1/4 to 1/2 cup of water.

3. Add oil to the rice flour with your fingertips or a fork.

4. Combine the chickpea flour mixture and the rice flour mixture; make a stiff dough with asafetida water.

5. Press dough through a pastry tube or cookie press to make ring shapes, dropping them into the hot oil.

6. Fry till golden; remove and drain.

Cook's Notes

Yields 20 to 25 crackers.

I was looking for a murukku recipe that would meet my pantry's inventory, as I almost ran out of my Indian dry ingredients.. That was so easy to find, thanks. The directions are very easy to follow and clear.
