1 cup Organic unbleached white flour
1 cup Organic whole wheat pastry flour
1 1/2 tsp Non-aluminum baking powder
1 tsp Cinnamon
1/2 tsp Eden sea salt
1/4 tsp Nutmeg
1/2 cup Coarsely chopped walnuts
1/3 cup Organic seedless raisins
1 cup Eden organic applesauce
1/2 cup Edensoy Extra Vanilla
1 tbsp Eden organic apple cider vinegar
2 tbsp Eden organic safflower oil
1/3 cup Pure maple syrup
Preparation
1. Preheat oven to 375F. Lightly coat muffin tin with oil.
2. In a large bowl, combine the first nine ingredients.
3. In a medium bowl, mix well the applesauce, Edensoy, vinegar, oil, and maple syrup.
4. Stir the wet ingredients into the dry.
5. Fill muffin tins three-quarters full.
6. Bake 18 to 20 minutes until a toothpick comes out clean.
