Black bean soup

delious but very hot soup not for the mild salsa type

Ingredients

2 Tbls olive oil

1 Onion chopped

3 Garlic cloves chopped

1 to 3 tsp. Chilli powder ( a matter of taste)

1/2 tsp. Oregano

2 cans Black beans

Black pepper to taste

Preparation

In large pot over medium heat, cook onion in hot olive oil for five minutes

Stir in garlic chilli powder, and oregano

Puree one can of the black beans but drain first.Add to pot.

Add second drained can of beans to pot of oil and ingredence.

Reduce heat simmer 15 minutes, stir often.

Season with pepper and garnish with chedder cheese, and parsley.
