Mexican Skillet Chicken

I serve this awesome dish over packaged spanish rice. Very hardy, very tasty and great for leftovers too!

Ingredients

1t Chili powder
1/4 t Salt
1/4 t Black pepper
4 Skinless chicken breasts
1 t Canola or olive oil
1 15-oz Can black beans
1 c Chunky tomato salsa drained and rinsed
1 c Fresh tomato, chopped

Preparation

Combine chili powder, salt and pepper and sprinkle evenly on both sides of chicken. Heat oil in a large nonstick skillet over medium heat. Add chicken and cook 10 minutes, turning to brown both sides. Stir in beans, salsa and tomato. Heat to boiling. Cover, reduce heat and simmer 3 to 5 minutes or until chicken is done and beans are heated through.
