Ingredients

1 to 2 lbs. MED. SIZE SHRIMP, CLEANED AND DEVEINED

1/2 cup OLIVE OIL

1 ONION CHOPPED

PARSLEY, MINCED

OREGANO

S/P AND HOT SAUCE

4 cups CHICKEN BROTH

2 cups WATER

2 cups RICE

8 oz. CAN CHOPPED TOMATOES

2 GARLIC CLOVES CHOPPED

GRATED PARMESAN CHEESE

Preparation

HEAT OIL, ADD ONIONS UNTIL SOFT

ADD TOMATOES, STOCK AND WATER. BRING TO A BOIL, ADD RICE

COVER AND COOK RICE ON LOW FOR 20 MIN. COVERED. ADD SHRIMP COOK FOR 3 MIN. SERVE WITH GRATED CHEESE.

Cook's Notes

I HAVE ALSO ADDED CAPERS, OR CUT UP BLACK OLIVES, OR CUT UP ROASTED PEPPERS. DO NOT OVER COOK SHRIMP. CAN BE PUT ON HEATED SERVING DISH, MAY HAVE TO ADD A LITTLE MORE WATER.
