Cold Sesame Noodles

Ingredients

1 package Udon or soba noodles

3 tbs Tahini or peanut butter

2-3 cloves Garlic, minced

2 tsp Fresh ginger, minced

2 tbs Tamari

1/2 tsp Chili powder

1 tbs Maple syrup

1/2 tsp Rice vinegar (opt)

2 tbs Toasted sesame seeds

1-2 tbs Sesame oil

3 Scallions, chopped

1/2 cup Snowpeas

1/2 cup Carrots, finely diced

Preparation

Cook the noodles according to the directions on the package, drain, and cool. Mix the rest of the ingredients except for the scallions, snowpeas, and carrots. Taste and adjust seasonings as necessary; thin with water if needed. Add noodles, snow peas, and carrots and toss until well coated. Sprinkle with scallions. Serve cold.

Cook's Notes

I did not cook the carrots, but I diced them so small that it didn't matter. If desired, you can perhaps steam the carrot for a few minutes before dicing.
