Saute the onion in the oil for one minute over medium heat. Add celery, peppers, and mushrooms and saute for three more minutes. Add garlic, basil, oregano, paprika, and cayenne pepper and saute 2-3 minutes until the vegetables are lightly browned. Remove from heat. In a large bowl, mash the beans. Add tamari, ketchup, mustard, salt, and pepper, and stir well. Add sauteed vegetables, then the oats and stir thoroughly. Line a cookie sheet with wax paper. Measure 1/2 cup portions and place the burgers on the paper. Press them to flatten. Chill in refrigerator for at least 30 minutes. Using a little oil, cook the burgers in a skillet until well browned on each side (3-5 minutes per side). Serve on a whole wheat bun with lots of lettuce and a thick slice of tomato.
