Baked Scallops

Good friend - June Staunton

June and I have spent many lovely evenings entertaining with friends. She is a superb cook, and we frequently share recipes. This is one that she prepared for my 59th birthday.

Ingredients

1 lb. Sea scallops
1 cup Fresh bread crumbs
1/4 cup Butter, melted
2 tbsp. Parsley
1/4 cup Sherry
1/4 cup Lemon juice
1 clove Garlic, minced

Preparation

Preheat oven to 425 degrees.


Butter shallow baking dish, which is large enough to hold scallops in one layer.

Spread 1/2 cup bread crumbs on bottom of dish.

Spread scallops in a single layer on top of crumbs.

Mix parsley, remaining crumbs and sprinkle over scallops.

Combine butter, sherry, lemon juice, garlic, and pour over all.

Bake at 425 degrees for 20 min. or until bread crumbs are browned.
