Apple Cake

Delicious super moist cake!

Ingredients

4 c. Grated Granny Smith Apples

2 c. Sugar

2 Eggs

1 c. Canola Oil

2 tsp. Vanilla

1 tsp. Salt

3 c. Flour

2 tsp. Baking Soda

1 c. Chopped Walnuts

1 bag Butterscotch Bits

ICING:

1 1/2 c. 10x Sugar

2 tbsp. Milk

2 tsp. Vanilla

Preparation

Grate the apples into a large bowl and cover w/the sugar- let stand 1 hour.

Combine: egg-oil-vanilla- add to apples.

Mix in: salt-flour-baking soda-nuts-and butterscotch bits.

Bake @ 350degrees in a Jelly Roll Pan (either a 20x10 or 11x16) for 40-45 minutes.

mix icing and apply to cake after baking while it is still warm.

Cook's Notes

Best if cut into small squares once cooled. The butterscotch is a subtle surprise!
