Crunchy Lentil Salad

Healthy salad.

Ingredients

1 cup Dry lentils, cooked, drained, rinsed and dried.

1 1/2 cups Sprouts

1/2 cup Chopped mint leaves

1/4 cup Minced red onion

1/4 cup Orange juice

2 tblsp Olive oil

1 tblsp Balsamic vinegar

1 tsp Minced orange zest

1 tsp Curry powder

1 tsp Salt

Pepper to taste

Preparation

Add all ingredients, toss well.

Refrigerate for several hours before serving.

My husband and I had this at dinner, but we felt that the ingredients did not add up to a full flavor the way that we had anticipated.

I used bean sprouts,for sprouts. As in England, sprouts are brussel sprouts lol .The flavour was odd, as was the texture. The orange, mint and curry powder were a must, as were the lentils and onions. With finer bean sprouts than I used, it probably would have been grand ,or possibly celery instead.
