Skinny Garlic Mashed Potatoes

Potatoes cook right in the broth. SIMPLE>

Ingredients

2 cans (14 1/2 oz ea) Swanson Seasoned Chicken Broth with Roasted Garlic

5 Large potatoes, cut into 1" pieces (about 7 1/2 cups)

Preparation

In saucepan place broth and uncooked potatoes. Heat to a boil. Cover and cook over medium heat 10 min or until potatoes are tender. Drain, reserving broth.

Mash potatoes with 1 1/4 cups broth. If needed, add additional broth until potatoes are desired consistency.

couldn't find the broth with roasted garlic flavor... roasted my own garlic and threw in while boiling, and threw more in before mashing... i love it. : )
