Salad.
Salad:
4 cups Cooked brown rice
1 cup Chopped red pepper
1 Carrot, grated
1 tblsp Olives or Scallion, finely chopped
1 cup Chopped red cabbage
1 cup Chopped parsley (or 1/2 celantro)
1/3 cup Sunflower seeds
Dressing:
6 tblsp Sesame Oil (unrefined)(or canola)
4 tblsp Brown rice vinegar
2 tsp Toasted Sesame Oil (yes oil)
1 tsp Tamari (Soy Sauce)
Toss brown rice with chopped vegies and sunflower seeds until evenly mixed.
Pour dressing ingredients in a bottle or jar and shake vigorously. Drizzle dressing on rice and toss.
