Chicken Tortilla Soup

Cook Once Eat for a Week

Can be made ahead and frozen for later use. Easy to make.

Ingredients

8 c +2T chicken broth

1 c Chopped onion

2 tsp Minced garlic

1/4 c Green chiles

2 c Cooked cubed chicken

1 c Frozen corn

1/2 c Frozen bell pepper strips

1/4 c Chopped fresh cilantro

1t Lime juice

2 tsp Cumin

Baked Tortilla Chips

Preparation

spray large soup pot with Pam. add 2T chicken broth and heat over medium high heat. add onion, garlic, chiles top of and cook stirring frequently, 3-5 minutes, until softened. add remaining broth, chicken, corn, bell pepper, cilantro, lime juice and cumin. bring to a boil over high heat. reduce heat to low and simmer 10-15 minutes. soup can be frozen. reheat on stovetop or in microwave oven. just before serving garnish with baked tortilla strips.
