If you find yourself buying the same five or seven fruits and vegetables week after week, you might be missing out. Eating a rainbow of fruits and vegetables as part of a balanced diet with foods from all the food groups provides a “palette of nutrients” our bodies need. That’s the message behind the American Dietetic Association’s 2011 National Nutrition Month® theme, “Eat Right with Color.”
This week, we’ve selected recipes featuring colorful fruits and vegetables that may be a change of pace from your usual fare. We round out these suggestions with nutrient-rich grains, dairy and meat ingredients that your family will love.
Start with a family meal of Glazed Sweet Potatoes and California Dried Plums with Ginger, Turkey Stuffed Pasta Italiano and Honeydew Kiwi Smoothies for dessert. Other colorful recipes to try this week include Spinach Souffle, Blueberry-Banana Batido, Cold Beet Soup and Shrimp and Avocado with Mango, Chile and Lime Dressing.
