In many families, Thanksgiving leftovers are as anticipated as the big meal itself. This week, we are featuring some recipes using common Thanksgiving leftovers. Food safety experts advise that leftover turkey, stuffing and other cooked dishes will only stay safe to eat in the refrigerator for 3-4 days. For a safe enjoyment of leftovers, freeze extra portions to use later. Be sure to reheat all turkey leftovers to an internal temperature of 165 F. Always bring gravy to a rolling boil before re-serving and if you are reheating in the microwave oven, cover food and be sure to rotate the dish so it heats evenly.
Enjoy a leftover thanksgiving feast of Turkey Meatballs with Dried Plums, Pumpkin and Mashed Potato Soup and Basil Green Beans. Other treats to enjoy safely throughout the week include Pumpkin Milk Punch, Turkey Tetrazzini, Cranberry Pork Roast and Turkey Chopped Salad with Spicy Avocado Dressing.
