This recipe was awesome! I made it for myself and had left overs for days. I didn't even get tired of it. It is so full of flavor. For the left overs I melted some additional cheddar cheese on top. If I were to make this again, I would decrease the cooking time just slightly. An hour and 15 minutes I felt was too much and resulted in a slight over cooking. I think 45 min to an hour is plenty. Next time I may experiment with different cheeses and use egg substitute and turkey bacon to save on the calories. Other than that, it was very tasty.

I absolutely LOVE this Quiche! Not just because it is low carb- my non dieting friends also love it! I usually add both spinach and broccoli to the quiche, use swiss cheese or mozzarella, and make one and a half times the recipe...cook it in a square pan...let it cool...cut individual servings...then put them in baggies in the freezer. They last in the freezer a long time and make it so convenient to just microwave a serving or two (or more for company). It's a great, tasty way to get my little ones to eat their veggies- my 3 and 5 year olds ASK for it!
