| 1 | Flour tortilla |
| 1/2 c. | Whole pinto beans (canned) |
| 1/2 | Tomato, diced |
| 1/2 c. | Shredded green cabbage |
| 1 oz. | Sharp cheddar cheese, shredded |
Place pinto beans & cheese on tortilla and warm in microwave for a minute. Add chopped tomatoes and cabbage. Roll up and enjoy!
It is fast, healthy and vegetarian to boot! (Of course you could add meat or eggs to this....) It would be even leaner with reduced fat cheddar cheese.
