1 c. Nonfat sour cream
1 c. Nonfat cottage cheese
1 1/2 t. Curry powder
1 1/2 t. Lemon juice
1 (15-oz) can Artichoke hearts, drained
1/4 c. Thinly sliced green onions
In a blender, combine sour cream, cottage cheese, curry and lemon juice. Blend until smooth. Add artichokes and blend in two or three bursts; it should be slightly chunky. Stir in green onions. Makes 3 cups.
