This is one of our favorite quick breakfast foods. You can vary it in many ways and still have the same great results.

Ingredients

1/2 Small apple

1 Heaping tbsp fat-free cottage or cream cheese

1 Slice multi-grain bread

Dash of cinnamon

1 tsp Low-calorie sweetener (Splenda, Nutrasweet, etc.)

Preparation

1. Pare and core apple. Dice into 1/2" cubes. Cook over low heat until soft.

2. Toast bread in toaster (very brown).

3. Spread cheese on toast.

4. Sprinkle a pinch of sweetener over cheese.

5. Place apples over cheese. Sprinkle cinnamon and sweetener to taste.


Variations: type of bread used, type of fruit used, applesauce, canned sugar-free fruit fillings, spices, top with nuts, raisins or other dried fruit, drizzle a little powdered sugar/milk/vanilla over the top

Cook's Notes

This is such an easy and nutritious snack, light breakfast or breakfast side. When the kids have slumber parties, we fix up a breakfast bar and let their guests make them to their liking.

Great idea - tasted yummy.. We fed it to our toddlers - big hit! we avoid the chemical sugars - a dash of agave did the trick for us!

sweetner could also include stevia

I made these for breakfast yesterday. My husband liked them too. A change from eggs and sasauge. :)
