Ingredients
1 (15 1/4-ounce) can crushed pineapple, undrained
1 (8-ounce) carton low-fat or ff plain yogurt
3 tablespoons Honey
1 tablespoon Chopped fresh mint (optional)
6 (6-ounce) paper cups
6 Wooden sticks
Preparation
Combine first 3 ingredients in a small bowl. Stir in mint, if desired.
Spoon pineapple mixture evenly into paper cups. Cover tops of cups with aluminum foil, and insert a wooden stick through foil into center of each cup. Freeze until firm. To serve, remove aluminum foil; peel cup from pop.
Cook's Notes
The original recipe called for 1 carton of pineapple yogurt - but to switch it up to the eat-clean diet - I made it low fat or ff plain yogurt.
