Ingredients

1 Gordita or Burrito wrap 10-12 inch size
1/3 c Vegetarian Refried Beans
1/4 c Grated cheese, (chedder or co-jack)

Preparation

Place beans in ceramic coffee mug or other small microwaveable dish and heat for 1 minute. Meanwhile, place tortilla on paper or ceramic plate, (never use melamine in a microwave), grate and spread cheese directly on tortilla. When beans have finished in microwave, put in tortilla with cheese on top and cook on high 30 seconds. Put beans on top of cheese and tortilla and roll up.

Cook's Notes

To roll burrito, place beans on small area less than 1/3rd of a side of the burrito. Flip side over mixture, fold in bottom third sides and turn once. Repeat folding in the middle third sides and turn over . Repeat again with last remaining sides, but this time brings the sides inward before turning the final time. This will keep the loose mixture from dripping out. Let sit a minute or two before serving as mixture will be hot for smaller children. Vegetarian beans are best. You can cover and store unheated leftover beans in can for two to three days
