Whole Wheat Pancakes

Children & adults love these nutritious pancakes rolled up, folded, or eaten flat. They are great served with kiwis, bananas, or peaches and cream cheese, or honey and yogurt

Ingredients

3 2-3 cups Milk or buttermilk
3 Eggs, beaten
One-quarter cup Vegetable oil or melted butter
1 2-3 cups Whole-wheat flour
1 1-2 cups White flour
1 teaspoon Cinnamon
Vegetable oil for frying

Preparation

Beat together the milk, eggs, and oil or butter. Add the flour cinnamon and beat until batter is smooth, then let stand for 30 mins.

Heat a lightly oiled nonstick frying pan and pour in a small ladleful, about 3 T, of batter. Cook over med heat until lightly browned, about 2-3 mins on each side

Cook's Notes

Good source of calcium and iron. Makes about 15-20 pancakes.

these are much more of a crepe than a pancake... as such, however, they do have a nice texture. I added some honey (about a tablespoon) for a light sweetness, and a teaspoon of baking soda for a bit of body.

I add flax seeds and wheat germ to these to make them extra healthy.
